Technological Value and Storage Durability of Food Depending on Modern Production Systems

In recent years, there have been significant changes in global food consumption. New consumer behaviors and other factors determining food demand are the reasons for the significant diversification and growth of food consumption in many countries. Due to the high expectations imposed on food production, it is clear that various solutions are being sought in production technology with new opportunities in the aspect of food quality. Obtaining a high technological value of food depends to a large extent on the quality parameters of the raw material assessed immediately after harvest and after a long-term storage period. Despite this, much of the food is lost due to pre-harvest and post-harvest factors. To solve this problem, numerous interventions and improvements in post-harvest management are being implemented. Implementation of these processes is only possible through continuous identification and management of existing and emerging new factors contributing to post-harvest losses. The most important factors contributing to post-harvest losses are those that cause food spoilage and those related to pre-harvest product management. In addition, these factors include improper production practices, genetic conditions, harvesting methods, quality of irrigation water, occurrence of diseases and pathogens (microorganisms, insects). The quality of the product depends on local conditions, policy, market demand, infrastructure, packaging materials and the level of knowledge and awareness in a given environment.
