Prof. Dr. Evandro de Souza is currently a Full Professor at the Laboratory of Food Microbiology, Department of Nutrition, Health Sciences Center, Federal University of Paraíba, João Pessoa, Brazil. He has a degree in Nutrition from the Federal University of Paraíba (2001), a Master’s degree in Food Science and Technology from the Federal University of Paraíba (2003), and a Ph.D. in Nutrition from the Federal University of Pernambuco (2006). He has acted as an ad-hoc consultant for national (FAPESB, FAPEMIG, FACEPE, CNPq and CAPES) and international (CONICYT-Chile, ANR-França and FNN—Austrian Science Fund) research agencies, as a Member of the Advisory Chamber for the Area of Nutrition at CAPES and as a member of teams involved in the execution of research, development, and innovation projects in cooperation with national and international institutions. He is a member of the Sociedade Brasileira de Microbiologia (SBM) and Sociedade Brasileira para o Progresso da Ciência (SBPC). His research interests are food safety; control of foodborne pathogens; antimicrobial compounds; bioactive molecules; probiotics; prebiotics; edible coatings; and intestinal microbial ecology.
