Petros Taoukis is currently a full Professor at the Laboratory of Food Chemistry and
Technology, School of Chemical Engineering, National Technical University of
Athens. From 1992 to 1995, they served as a Director of the Research and
Development Department at the Knorr Bestfoods Hellas (currently Unilever),
Athens, Greece. They have been employed at the National Technical University of
Athens since 1995, where they obtained the full Professor position in 2010. They
completed their Ph.D. studies in Food Science at the University of Minnesota, USA
in 1988. Their research and publications are in the areas of kinetic modeling of
food deterioration during and post-processing, quality and shelf-life predictive
modeling, food packaging, predictive microbiology, enzyme technology, and
the development and application of Time Temperature Integrator systems as quality
monitors of food products. Their research in the modeling of food deterioration
and the contributing parameters during and post-processing focuses on novel
processes such as HP and PEF processing, osmotic dehydration, and intelligent
packaging. Their work in the area of this aims to develop and apply optimal
systems of food quality monitoring and chill chain management.
