The morphological diversity of Moroccan honey bees (Apis mellifera) was investigated using geometric morphometrics to assess wing venation patterns among three populations representing three climatic zones: desert, semiarid, and Mediterranean. A total of 193 honey bee samples were analyzed and compared to historical reference samples from the Morphometric Bee Data Bank in Oberursel, representing the three subspecies: A. m. intermissa, A. m. sahariensis, and A. m. major. Principal component analysis and linear discriminant analysis revealed significant, yet overlapping morphological differences among the climatic groups. Spatial modeling showed a significant southwest–northeast clinal gradient in wing morphology. Almost all samples were assigned to the African evolutionary lineage, except one, suggesting a dominant African genetic background. Interestingly, all three populations showed greater morphological affinity to A. m. intermissa than to A. m. sahariensis, which could indicate introgression or limitations in the current reference dataset. These discrepancies highlight the necessity of revising subspecies boundaries using updated morphometric and genomic approaches. These findings improve our understanding of honey bee biodiversity in Morocco and provide valuable information for conservation and breeding programs. Full article

This study comprehensively analyzes the mineral and heavy metal profiles of seven honey types, focusing on the contents of potassium (K), calcium (Ca), magnesium (Mg), iron (Fe), zinc (Zn), manganese (Mn), copper (Cu), cadmium (Cd), and lead (Pb), with particular emphasis on honey produced in eastern Morocco. Multifloral honey was found to have the highest total mineral content (661 mg/kg), while rosemary honey had the lowest (201.31 mg/kg), revealing the strong influence of floral and botanical origin. Darker honey, such as multifloral and jujube, were richer in minerals, with potassium consistently being the most abundant, followed by calcium, magnesium, and iron, while cadmium and lead remained within safe, trace-level concentrations. Additionally, sugar profiling showed that all samples contained fructose, glucose, maltose, turanose, erlose, sucrose, and palatinose, with particularly high fructose and glucose contents in multifloral honey. Principal component analysis (PCA) accounted for 75% of the variation and identified three distinct groups of honey based on mineral content multifloral, eucalyptus, and rosemary. Multifloral and eucalyptus honey had higher concentrations of iron, magnesium, and calcium, whereas rosemary honey was richer in zinc and copper. The findings underscore the potential of honey as a marker of environmental quality and suggest that eastern Morocco honey possesses favorable characteristics for national and international commercialization. This pilot study provides insights into the Moroccan public’s understanding and willingness to engage in insect pollinator preservation, highlighting widespread awareness alongside significant knowledge gaps. The success of biodiversity conservation efforts, especially those aimed at insect pollinators, is greatly enhanced by an informed and committed populace. Understanding public perceptions of insect pollinators is important as it shapes the effectiveness of conservation strategies and their implementation. Although our pilot study does not include every demographic of Moroccan society, it does include an important portion of the populace: educated urban youth. This is a key portion of the population that will be crucial in developing future conservation strategies, especially given the tendency towards increasing urbanization putting cities at the forefront of sustainable development. Our study aimed to assess opinions on insect pollinators, their services, and their declining population numbers in Morocco. We conducted a survey distributed mainly through the media over four months, receiving responses from 301 individuals. The results indicate that the public is aware of decreasing insect pollinator populations and their main threats, and shows a willingness to participate in conservation strategies. However, gaps persist in understanding the roles and ecology of pollinators. While honey bees and bumble bees are well-recognized for their role in pollinating agricultural and wild plants, there is less awareness about other common pollinators such as solitary bees and flies. Additionally, the essential contributions of non-bee pollinators remain widely overlooked. To address these findings, we recommend implementing specialized educational initiatives to increase public understanding of the vital functions of non-bee pollinators in supporting ecosystem services. In order to adopt a more encompassing strategy for the conservation of insect pollinators, upcoming outreach efforts within the national biodiversity strategy should emphasize the contributions made by lesser-known non-bee insect pollinators and strive to engage sectors of the population currently less involved in pollinator conservation. However, while this pilot study provides valuable insights, the sample size limits the generalizability of these conclusions. Future research with larger and more diverse samples would be beneficial to validate and expand upon these findings in order to provide a more comprehensive understanding of all areas of public perception and engagement in pollinator conservation in Morocco. Expanding sampling to include older, less educated, and less urban demographics would strengthen these initial insights and broaden their application, especially beyond urban attitudes. Full article

Honey, with its varied and extensive characteristics, is a complex and diverse biological substance that has been used since ancient times. The aim of this study is to thoroughly characterize the physicochemical, phytochemical, and biological properties of four floral honey varieties from the Fez-Meknes region in Morocco, with the goal of promoting the valorization of Moroccan honey in skincare and cosmetic products. The analyses of their physicochemical characteristics encompass various parameters such as pH, acidity, density, water content, Brix index, conductivity, ash content, hydroxymethylfurfural (HMF) content, and color. The levels of polyphenols range from 22.1 ± 0.4 to 69.3 ± 0.17 mg GAE/100 g of honey, measured using the Folin–Ciocalteu method for polyphenol quantification. Additionally, the estimation of flavonoid quantities in 100 g of honey, conducted using the aluminum trichloride method, reveals values ranging from 3.6 ± 0.2 to 7.2 ± 0.6 mg QE. Furthermore, it is noteworthy that honey exhibits high levels of glucose and relatively low concentrations of proteins. The quantitative evaluation of antioxidant effects, carried out through the 2,2-diphenyl-1-picrylhydrazyl free-radical-scavenging method and the ferric-reducing antioxidant power (FRAP) method, highlights the strong antioxidant capacity of multifloral honey, characterized by low inhibitory concentration values (IC50 = 30.43 mg/mL and EC50 = 16.06 mg/mL). Moreover, all honey varieties demonstrate antibacterial and antifungal properties, with multifloral honey standing out for its particularly pronounced antimicrobial activity. The correlation analyses between phytochemical composition and antioxidant and antibacterial activities reveal an inverse relationship between polyphenols and IC50 (DPPH) and EC50 (FRAP) concentrations of honey. The correlation coefficients are established at R2 = −0.97 and R2 = −0.99, respectively. Additionally, a significant negative correlation is observed between polyphenols, flavonoids, and antifungal power (R2 = −0.95 and R2 = −0.96). In parallel, a marked positive correlation is highlighted between antifungal efficacy, DPPH antioxidant activity (R2 = 0.95), and FRAP (R2 = 0.92). These results underscore the crucial importance of phytochemical components in the beneficial properties of honey, meeting international quality standards. Consequently, honey could serve as a natural alternative to synthetic additives. Full article

This study developed a predictive model for Escherichia coli survival in Amlou, a Moroccan almond–honey–argan oil spread, focusing on argan oil, sugar, and peptone concentrations. Based on the Doehlert matrix design, relationships were established between these ingredients and the death rate (DR) and survival period (SP). Sugar affected the DR, while argan oil and peptone influenced the SP. The DR model demonstrated an RMSE of 0.0095 and SEP of 22.22%, confirming its accuracy. This work offers valuable insights for food producers about E. coli’s behavior in Amlou-like foods. Full article

The physicochemical traits and an array of organic and inorganic contaminants were monitored in monofloral honeys (i.e., jujube [Ziziphus lotus], sweet orange [Citrus sinensis], PGI Euphorbia [Euphorbia resinifera] and Globularia alyphum) from the Moroccan Béni Mellal-Khénifra region (i.e., Khénifra, Beni Méllal, Azlal and Fquih Ben Salah provinces). Moroccan honeys were in line with the physicochemical standards set by the European Union. However, a critical contamination pattern has been outlined. In fact, jujube, sweet orange, and PGI Euphorbia honeys contained pesticides, such as acephate, dimethoate, diazinon, alachlor, carbofuran and fenthion sulfoxide, higher than the relative EU Maximum Residue Levels. The banned 2,3′,4,4′,5-pentachlorobiphenyl (PCB118) and 2,2′,3,4,4′,5,5′-heptachlorobiphenyl (PCB180) were detected in all samples and quantified in jujube, sweet orange and PGI Euphorbia honeys; while polycyclic aromatic hydrocarbons (PAHs), such as chrysene and fluorene, stood out for their higher contents in jujube and sweet orange honeys. Considering plasticizers, all honeys showed an excessive amount of dibutyl phthalate (DBP), when (improperly) considering the relative EU Specific Migration Limit. Furthermore, sweet orange, PGI Euphorbia and G. alypum honeys were characterized by Pb exceeding the EU Maximum Level. Overall, data from this study may encourage Moroccan governmental bodies to strengthen their monitoring activity in beekeeping and to find suitable solutions for implementing more sustainable agricultural practices. The scope of the current study was to monitor if semi-quantitative data of volatile compounds (volatilome) of citrus honey (ch) produced in different countries could potentially lead to a new index of citrus honey authentication using specific ratios of the identified volatile compounds in combination with machine learning algorithms. In this context, the semi-quantitative data of the volatilome of 38 citrus honey samples from Egypt, Morocco, Greece, and Spain (determined by headspace solid phase microextraction coupled to gas chromatography mass spectrometry (HS-SPME/GC–MS)) was subjected to supervised and unsupervised chemometrics. Results showed that honey samples could be classified according to the geographical origin based on specific volatile compounds. Data were further evaluated with additional nectar honey samples introduced in the multivariate statistical analysis model and the classification results were not affected. Specific volatile compounds contributed to the discrimination of citrus honey in different amounts according to geographical origin. These were lilac aldehyde D, dill ether, 2-methylbutanal, heptane, benzaldehyde, α,4-dimethyl-3-cyclohexene-1-acetaldehyde, and herboxide (isomer II). The numerical data of these volatile compounds was summed up and divided by the total semi-quantitative volatile content (Rch, Karabagias–Nayik index) of citrus honey, according to geographical origin. Egyptian citrus honey had a value of Rch = 0.35, Moroccan citrus honey had a value of Rch = 0.29, Greek citrus honey had a value of Rch = 0.04, and Spanish citrus honey had a value of Rch = 0.27, leading to a new hypothesis and a complementary index for the control of citrus honey authentication. Background: This work aimed to perform a comprehensive investigation of organic Moroccan honeys obtained from plants of euphorbia, arbutus, and carob, based on the determination of physico-chemical profiles and volatile fingerprints. Methods: The selected analytical approach involved different techniques, including physico-chemical procedures for determination of humidity, acidity, diastase activity; solid-phase microextraction (SPME) coupled to GC-MS for aromatic fraction exploration; and ICP-MS for multi-element analysis. Results: The results obtained from the physico-chemical analyses were highly comparable to those of other commercial honeys. In 50% of samples investigated, the diastase number was just above the legal limit fixed by Honey Quality Standards. The analysis of the volatile fraction highlighted the presence of numerous compounds from the terpenoid group along with characteristic molecules such as furfural, isophorone, and derivatives. In most cases, VOCs were distinct markers of origin; in others, it was not possible to assess an exclusive source for bees to produce honey. Conclusion: The results contributed to place the three varieties of honey investigated among the commercial products available in the market. Many variables determined returned positive indications about quality and safety of these special honeys. Full article

This work aimed to characterize and compare the physicochemical, ascorbic acid, phenolic, and flavonoid compounds, as well as the antioxidant properties, pollen spectra, and sugar profiles of twenty-three organic honeys produced in the Middle Atlas of Morocco. As results, the pollen analysis showed 22 taxa and revealed the dominance of Ziziphus lotus pollens for all monofloral honeys. The moisture content ranged from 15.9 to 19.0%, pH values werebetween 3.9 and 4.8, electrical conductivity varied from 100 to 581 µs/cm, ash content varied from 0.1 to 2.4%, and the invertase activity ranged from 3.5 to 36 U/kg. Moreover, hydroxymethylfurfural(HMF) varied from 1.2 to 13.5 mg/kg, which confirmed the freshness of our honey samples. For the sugar profiles, there were no significant differences between the examined groups of honeys (p > 0.05) for both fructose and glucose. Additionally, our study showed good antioxidant properties (total antioxidant activity ranged from 34.18 to 131.20 mg AAE/g; DPPH IC50 values ranged from 8.14 to 45.20 mg/mL; ABTS IC50 values ranged from 8.19 to 32.76 mg/mL) and high amounts of phenolic compounds ranging between 20.92 ± 0.03 and 155.89 ± 0.03 mg GAE/100 g, respectively; flavonoid compounds ranged from 5.52 to 20.69 mg QE/100 g, and ascorbic acid ranged from 8.01 to 23.26 mg/100 g. Overall, the proximate composition and the general characterization of organic monofloral and polyfloral honeys as sustainable and health-promising functional products may increase their commercial values, promote their marketability, and might have a significant impact on the basic circular/sustainable economy as a solid lever for solidarity economic development, especially in the rural/poor Moroccan communities. The investigated features may allow and support the incorporation of Moroccan organic honeys and their biovaluable ingredients in the nutraceutical and food industries for multiple purposes. Euphorbia officinarum L. is a Moroccan endemic plant known as “Tikiout” and “Daghmus” that can also be found in Mauritania, Western Sahara, and Algeria. In the present review, “Euphorbia officinarum”, “metabolites” “hemisynthesis” were the keywords used for the research in the Web search engine Google Scholar and in the database Web of Science. Triterpenes, phytosterols and ingol diterpenes were isolated and identified in the latex of Moroccan E. officinarum. More than sixty triterpenes were obtained by hemisynthesis from natural triterpenes. Some of these derivatives had insecticidal and antimicrobial activity (phytopathogenic bacteria). The total phenol content and the antioxidant and anti-α-glucosidase activities were dependent on the time and temperature of extractions and also on the plant solvent ratio. The antioxidant activity of monofloral honey of E. officinarum origin was attributed to the phenol fraction (this fraction, previously isolated from honey samples, had better activity than the entire honey). Throughout history, honey has been used to treat various diseases. The present work examined and assessed the in vivo anti-inflammatory potential of Moroccan thyme honey and its association with essential oils from three selected plants: Origanum vulgare L.; Mentha spicata L.; Eucalyptus globulus L. The chemical composition of the essential oils was studied, and preliminary toxicity, in vitro anti-inflammatory, and antibacterial tests were conducted. Then the anti-inflammatory effect was determined by applying carrageenan and an experimental trauma-induced paw edema test in rats. The essential oils were rich in phytochemicals and showed significant antibacterial activity against four selected ATCC bacterial strains. The results revealed the significant anti-inflammatory potential of honey and mixtures with essential oils and indicated higher efficiency of mixtures compared to honey alone. It can be concluded that the mixtures of honey and essential oils have advantageous anti-inflammatory effects and may be used for treating different types of inflammation in humans after certain clinical trials. Wound healing consists of several continuous phases involving various cells and chemical intermediates. As a rich source of nutrition elements, honey has proved to have potential benefits in the treatment of various diseases. The present study was designed to investigate the healing effect of a honey mixture with selected essential oils on chemical and thermal wound models in rabbits. Dressing mixtures of Thymus vulgaris honey with three essential oils (Origanum vulgare, Rosmarinus officinalis, and Thymus vulgaris) were prepared and applied daily in the treatment groups. These essential oils were rich in phytochemicals and had significant antibacterial activity against four selected ATCC bacterial strains. Madecasol ointment was used as a standard control. The healing effect of the mixtures was evaluated by measuring wound surface area and comparing healing time. The results showed that the healing rate in the treatment groups was significantly higher than that of the untreated group and standard group. The best healing effect for burns was seen in the mixture of honey and Thymus vulgaris essential oil, which had wound closure rates of 85.21% and 82.14% in thermal- and chemical-induced burns, respectively, and showed the shortest healing time (14 days) in comparison to other groups. Therefore, it can be concluded that honey mixtures have significant beneficial effects on skin wound healing and, thus, they may be used as a healing agent in different types of wounds in humans after specific clinical trials. Honey is a natural food product very famous for its health benefits for being an important source of antioxidant and phenolic compounds. Euphorbia honeys obtained from different regions of Morocco were evaluated for their ability to inhibit acetylcholinesterase, lipoxygenase, tyrosinase and xanthine oxidase activities. Their antioxidant properties were evaluated using the: 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical-scavenging capacity, nitric oxide scavenging activity (NO) and scavenging ability of superoxide anion radical. Then, the phenolic extracts of the same entire honey samples were evaluated by liquid chromatography coupled to diode array detection and mass spectrometry (LC-DAD-MS) and tested for the biological activities previously evaluated on the entire honeys, in order to conduct a comparative study between both (honey and phenolic extracts). The chromatographic profiles for the studied Euphorbia honey extracts were different. Phenolic compounds gallic acid, 4-hydroxybenzoic acid and p-coumaric acid were detected in all samples, whereas kampferol was only present in two samples. Physicochemical parameters and total phenolic content were also determined. Entire honey that recorded the highest rate of phenols was sample M6 (E. resinifera) = 69.25 mg GAE/100 g. On the other hand, the phenolic extracts had better antioxidant and enzyme inhibitory activities than the entire honeys, regardless the monofloral honey type. In conclusion, the studied Euphorbia honeys may have a great potential as antioxidant, anti-inflammatory and anti-tyrosinase sources for pharmaceutical and cosmetic applications. Full article

The emergence of multidrug-resistant bacteria has prompted the development of alternative therapies, including the use of natural products with antibacterial properties. The antibacterial properties of Zantaz honey produced in the Moroccan Atlas Mountains against Escherichia coli, Pseudomonas aeruginosa, and Staphylococcus aureus was evaluated and analyzed using chemometric tools. Minimum inhibitory concentration (MIC) and Minimum bactericidal concentration (MBC) against S. aureus were the lowest (112.5 ± 54.5 mg/mL), revealing that this species was most sensitive to Zantaz honey. P. aeruginosa showed an intermediate sensitivity (MIC= 118.75 ± 51.9 mg/mL), while E. coli was the most resistant to treatment (MIC = 175 ± 61.2 mg/mL). Content of monosaccharides, certain minerals, and phenolic compounds correlated with antibacterial activity (p < 0.05). Principal component analysis of physicochemical characteristics and antibacterial activity indicated that the parameters most associated with antibacterial activity were color, acidity, and content of melanoidins, fructose, epicatechin, methyl syringate, 4-coumaric acid, and 3-coumaric acid. The present study aimed to investigate the chemical composition, bioactive compounds, and antioxidant activity of two wild edible mushrooms, the honey fungus (Armillaria mellea) and the parasol mushroom (Macrolepiota procera), collected from Northern Morocco (MA) and Portugal (PT). Those species were chosen due to their edibility, nutraceutical, and medicinal properties. Bioactive compounds (ascorbic acid, tannin, total phenolic, total flavonoid, β-carotene, and lycopene) and their antioxidant activity were determined by spectrophotometric methods. Herein, the fruiting body of the samples revealed a significantly higher amount of bioactive compounds, and values varied between the Moroccan and the Portuguese ones. Methanolic extracts shown a strong antioxidant capacity: Using DPPH free radical-scavenging activity radicals (IC50 1.06–1.32 mg/mL); inhibition of β-carotene bleaching radicals (IC50 0.09–0.53 mg/mL); and, reducing power radicals (IC50 0.52–1.11 mg/mL). The mushroom species with the highest antioxidant capacity was A. mellea from MA. Chemical composition was analyzed by GC-MS and LC-MS methodologies. GC-MS analysis showed that the most abundant biomolecules group was sugar compositions in the four samples (62.90%, 48.93%, 59.00%, and 53.71%) and the main components were galactitol 16.74%, petroselinic acid 19.83%, d-galactose 38.43%, and glycerol 24.43% in A. mellea (MA), A. mellea (PT), M. procera (MA), and M. procera (PT), respectively. LC-MS analysis of individual phenolic compounds revealed that vanillic acid (198.40 ± 2.82 µg/g dry weight (dw) and cinnamic acid (155.20 ± 0.97 µg/g dw) were the main compounds detected in A. mellea, while protocatechuic acid (92.52 ± 0.45 and 125.50 ± 0.89 µg/g dw) was predominated in M. procera for MA and PT samples, respectively. In general, the results of this comparative study demonstrate that the geographic and climatic conditions of the collection site can influence biomolecule compounds and antioxidant properties of wild mushrooms. This study contributes to the elaboration of nutritional, nutraceutical, and pharmaceutical databases of the worldwide consumed mushrooms. Full article
