Special Issue Information

Dear Colleagues,

Mycotoxins are secondary metabolites produced by different fungal species that pose a significant threat to public health. Fungal growth and mycotoxin production can occur both before and after crop harvest, as well as during food processing. These toxins may also be found in food and feed commodities such as cereals, dried fruits, nuts, and animal-derived products. While aflatoxins, ochratoxins, fumonisins, zearalenone, and trichothecenes are among the most well-known mycotoxins, the growing concern around emerging mycotoxins and their interactions with other metabolites present new challenges.

This Special Issue aims to advance our knowledge of the occurrence, identification, and risk assessment of mycotoxins throughout the food chain. We welcome contributions focused on the following topics:

  • Mycotoxins’ occurrence in various food matrices.
  • Factors influencing mycotoxin contamination during production, processing, and storage.
  • Advances in analytical methods for the detection and quantification of mycotoxins and their metabolites.
  • Toxicological studies elucidating the impact of mycotoxins on human and animal health.
  • Risk assessments based on dietary exposure across different population groups.

All manuscripts are thoroughly refereed through a double-blind peer-review process. Toxins is an international peer-reviewed open access monthly journal published by MDPI.
