Special Issue Information

Dear Colleagues,

The efficient design and application of emulsion systems is a well-known approach in a range of disciplines, including food science. The ability of these systems to act as carriers of a variety of compounds and in turn enhance bioavailability, offer controlled substance release, and contribute to healthier formulations (reduced fat, salt, etc.) is well-documented, and has led to an increase in current research towards more complex emulsion systems.

This Special Issue invites original research articles and review contributions on all aspects of emulsions in food, including but not limited to the formulation, evaluation, and applications of oleogels, double (or multiple) emulsions, Pickering emulsions, Janus emulsions, and other novel complex emulsion systems.

Manuscript Submission Information

Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Chemistry is an international peer-reviewed open access semimonthly journal published by MDPI.
