The article was properly prepared in terms of methodology and content. It concerns an important and current research problem. Unfortunately, the research sample used is very small. This makes it difficult to generalize the validated research results.

Many thanks for  your comments. Yes we agree about the sample being small and therefore no inferences can be implied. We have acknowledged this limitation clear in the first paragraph in the last section of the paper.

The manuscript details a survey analysis of organic waste in restaurants in Peru. It is an interesting read and it falls within the expectations of the readership of Sustainability. Nonetheless, there are a few points that need some careful attention prior to the following reconsideration:

1) You can start the abstract from the sentence "The objective of this research...", and further add some numerical results on the last sentences. Please also avoid references in the abstract section.

2) The choice of keywords is not as good as it could be. Please choose one-word keywords.

3) The first two paragraphs of the introduction are basic and common knowledge. Please remove them.

4) Be concise in the introduction. You don't need a detailed literature review here. It is an original article, not a review one. 

5) Change Sí in figure 1 for yes

6) You don't need to add Source: authors on the tables

7) Forma de separación de los residuos orgánicos en excedentes y desperdicios - change to English

Please also give a final check on the English writing as there were a few typos all across the text.

Comments and Suggestions for Authors

The manuscript details a survey analysis of organic waste in restaurants in Peru. It is an interesting read and it falls within the expectations of the readership of Sustainability. Nonetheless, there are a few points that need some careful attention prior to the following reconsideration:

Thanks for your comments and suggestions observation. Although the changes suggested are of only Minor nature, we nevertheless have endeavour to attend all of them. Below are our full responses.  All changes are marked in red in the revised manuscript.

1) You can start the abstract from the sentence "The objective of this research...", and further add some numerical results on the last sentences. Please also avoid references in the abstract section.

We concur with the reviewers about the avoiding references in the abstract, so we have deleted them. As far as the other suggestions, we decided to keep the rest of the abstract it is. This is because the two initial sentences of it, introduce the problem we intend to tackle which is clearly stated in the sentence: “ the objective of this research…”. We have added a short numerical result in the last sentences.

2) The choice of keywords is not as good as it could be. Please choose one-word keywords.

We have re-written the keyword and we believe they are more indicative of what the title shows. Please note that we could not restrict some of the keywords to just one-word as suggested.

3) The first two paragraphs of the introduction are basic and common knowledge. Please remove them.

Weith all respect, we disagree with this comment/suggestion. It might that in some of the statements in this part of the introduction are ‘Basic and Common knowledge’ in some parts of the world, the fact that there is a lot of food waste in developing economies such as Peru is not (or only partly) known.  We have kept the two paragraphs.

4) Be concise in the introduction. You don't need a detailed literature review here. It is an original article, not a review one. 

We believe the brief literature review we introduce is relevant to the problem in hand. Chiefly because,  as we stated above, food waste is a topic under reperched in developing countries. The Lit review we have done, we believe is necessary and relevant to introduce the problem.
