Effect of Nisin on the Quality and Antioxidant Activity of Fresh-Cut Pumpkins (Cucurbita moschata Duch.)
Round 1
Reviewer 1 Report
Effect of nisin on the quality and antioxidant activity of fresh-cut pumpkins
8,9: Recheck the statement
12,13: Elaborate on the main findings
28: Mention production statistics of pumpkin and waste as well to emphasize the need for the project
Mention the nutritional value of pumpkin and %age loss of nutrients as a result of processing
41 to onward: Mention citation
In the text, first of all, Use the full form of the word then use an abbreviation e.g., for days mention the word days in the text then you can use d, and so on
41-48. Please add some relvent references. Please see these paper:
Comparison of chemical, physical and ultrasound treatments on the shelf life of fresh-cut quinces. Journal of Food Processing and Preservation, 44, e14366.
Enhancing the shelf stability of fresh-cut potatoes via chemical and nonthermal treatments. Journal of Food Processing and Preservation, 45(6), e15657.
Comparative analysis of antibrowning agents, hot water and high-intensity ultrasound treatments to maintain the quality of fresh-cut mangoes. Journal of Food Science and Technology, 59(1), 202–211
2.1 to 2.9: Citations missing in the methodology section
151: Cross-check unit of Ascorbate Peroxidase Activity
2.11, 2.12: Mention citations
2.14: Cross-Check method
3.1: Citations missing, some references from previous studies must be mentioned
3.2: Citations missing, justification, or possible phenomenon behind these changes must be mentioned
3.3: Provide some reasoning and add some cross-references as you have already mentioned this study has been conducted previously but the experimental material was different which may pave the way to elaborate these changes
Try to use the full form in figures like whitening index (WI) to properly understand the term
3.4, 3.5, 3.6, 3.7: Add some references
References should be updated
In some references, page numbers are missing
All the scientific names should be italic.
Please also check all the abbreviation.
It is good.

Dear authors
The following modifications are required:
Abstract
ü Before describing the goal, the authors must define the issue clearly in a single line and explain why they chose this approach to study this research.
ü The aim is the study is not correctly written.
ü The experimental design and component of factors should be specified in this study.
- The authors should provide some measured or quantitative values for the parameters under consideration. The authors should provide some quantitative data in terms of percentage significant increase or decrease in the abstract.
ü The authors should include a single line of prospects for the future.
Keywords
ü The keywords did not accurately reflect the content of the manuscript, and the words used to form the title should not be used as keywords. As a result, the structure of keywords should be modified.
Introduction
ü Some lines about the chemical composition of pumpkin should be provided
ü Some information about the beneficial health of pumpkin should be included
ü The authors should provide some information about the effect of storage period on the quality of pumpkin
ü The authors should give some lines about the knowledge gap which their research has covered along with the hypothesis statement
ü Additionally, the authors should include a novelty statement. What new things have the authors done or correlated in this study compared to previous ones?
Materials and Methods
ü L68 (2.1. Processing and Treatments of Fresh-Cut Pumpkins): The growth condition of pumpkin variety should be provided in this section. The manufacture of nisin should be added. After treatment of pumpkin slices with different concentration of nisin, why the researchers dried the slices of pumpkin?
ü The section 2.2, 2.3, and 2.5 should be supported by the references
ü L106 (2.6. Superoxide Anion (O2−·) Production Rate): The procedure of this assay should be written in detail.
ü Section 2.7-2.15: The authors should be detailed the procedures of these assays and also supported by the references.
ü L202 (2.16): The name of the test (ANOVA, T-test, etc.) used to determine the significance level should be included.
ü The Duncan or LSD method should be used for the comparison between the mean values.
Results
ü It is preferable to express the results of nisin treatment as an increasing or decreasing percentage compared to the control group.
ü It is preferable to compare the means of different treatment by Duncan or LSD method
ü It is advisable to present the figure as a bar chart rather than a scatter chart for more evidence and clearance.
ü The data of Figures 2 and 3 should be subjected to the statistical analysis
ü Sections: 3.4-3.7: The concentration of nisin used for the treatment of pumpkin slices should be defined
ü Figure 4: The concentration of nisin should be defined in the caption of this figure
ü The asterisks (*, **, ***) in the figures should be defined.
ü L298 (Correlation analysis): The significant correlation and the probability value of each pair parameters should be added
Discussion
This section is generally poorly written and should be improved. The authors should include some information about the mechanism of nisin's effects on pumpkin physicochemical parameters.
The quality of English language should be improved

Add the Latin for pumpkin to the title.
Add numerical data from the study results to the summary.
Please elaborate a little more on the introduction.
The ecological, maintenance processes and soil structure of the place where the material is taken affect the biochemical structure. Add these.
Include the numerical data in the correlation analysis.
