Special Issue Information
Dear Colleagues,
Micronutrient deficiency, also known as “hidden hunger,” refers to a lack of essential micronutrients and vitamins in the diet. Hidden hunger is a global health crisis, driven in large part by poverty. It affects more than 2 billion people over the world, mostly in low to middle income countries. The people of these countries cannot afford a diet containing nourishing, diverse foods that provides enough essential vitamins and micronutrients.
Biofortification is a process that aims to increase the density of micronutrients in widely consumed crops through agronomic practices and conventional or modern genetic breeding techniques.
Biofortification is now widely recognized as a key pillar in complementary nutrition strategies. Biofortified crops, vegetables, and fruits not only provide people nutritious food with essential micronutrients to improve their nutrition and health but also provide consumers an inexpensive approach to sustain good health. This Special Issue welcomes all types of articles, such as original research, review, and even opinion papers, focused on strategies that aim to cover the new advances and applications of biofortification in crop production. Therefore, we welcome you to share your scientific achievements and contribute to our common goal of sustainable development of the biofortified agricultural system.
