MDPI will attend the International Conference on Hongqu and Other Fermented Foods (2024 AAB&M), held in Guiyang, China, from 4 to 7 August 2024.
This conference will propose a scientific programme addressing the fundamental aspects, and any types, of products related to AAB, Monascus, Baijiu (liquor, a characteristic fermented product of Guizhou Province) and other fermented foods. We believe that it is necessary to bring together specialists on different types of AAB, Monascus and other microorganisms to elucidate the complex relationships that usually exist in the transformation of natural media to obtain fermented foods and even other products.

This conference mainly includes, but is not limited to, the following contents related to acetic acid bacteria, red yeast rice and their fermented products, as well as other fermented foods:
- Microbial biodiversity and classification;
- Genetics and molecular biology;
- Secondary metabolites and their formation mechanism;
- Modernization of the production process of fermented products;
- Flavour and evaluation of fermented foods;
- Historical and cultural heritage, internationalization and other aspects of fermented products;
- Innovation of vinegar, red yeast rice, liquor and other products.
