Dear Colleagues,

Food-derived bioactive compounds have recently received increased attention, as food matrices present a diverse range of valuable compounds with potential applications in functional foods, nutraceuticals, pharmaceuticals, and other related industries, far beyond direct consumption.

Ongoing progress in the field highlights the growing need for novel extraction methods that combine efficiency, selectivity, and sustainability. In parallel, extensive characterization is crucial. Beyond identifying and quantifying the targeted bioactive compounds and co-extracted constituents, characterization also enables the evaluation of their functional properties and examines the relationship between composition and functionality. It further determines whether these compounds can be utilized independently or necessarily formulated with other matrices or carriers to achieve their intended effects. Finally, stability assessment is essential to ensure the applicability of the identified compounds across diverse fields.

This Special Issue, “Bioactive Compounds in Food: Advanced Extraction and Characterization Methods”, focuses on food-derived bioactive compounds through the development and optimization of innovative extraction processes and extensive characterization approaches, including stability assessments. We especially welcome studies that investigate the relationship between composition and functionality, explore the utilization of novel solvent and delivery systems, and demonstrate high-added-value applications across related fields.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
