Special Issue Information
Dear Colleagues,
This Special Issue focuses on the development of paper-based supports and related devices for their use as point-of-care diagnostics in food and environmental applications. Paper-based materials are an interesting support since they are inexpensive, biocompatible, biodegradable and allow sample fluids to flow by capillary force. In addition, this type of support provides a large surface area for the immobilization of selective ligands and the detection of analytes via specific biomolecular reactions. Therefore, the use of paper-based devices in food safety and environmental applications is a topic of interest that should be explored more deeply from an analytical chemistry perspective. In this Special Issue, studies describing the use of paper-based supports for the screening or determination of any substance in food and environmental matrices are welcome; works on novel paper-based systems with potential for future application in food and environmental monitoring will also be considered.

All manuscripts are thoroughly refereed through a single-blind peer-review process. Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
