Background/Objectives: Conventional lipid parameters incompletely reflect coronary atherosclerotic burden, particularly in the setting of metabolic heterogeneity and residual cardiovascular risk. Composite indices such as the atherogenic index of plasma (AIP) and the triglyceride–glucose (TyG) index have emerged as integrative markers. Fatty acid desaturases regulate key pathways of lipid metabolism, and estimated desaturase activity indices (SCD-16, SCD-18, D5D, and D6D) may provide complementary information on the metabolic pathways underlying AIP and the TyG index. However, the relationships among composite atherogenic indices, plasma fatty acid composition, estimated desaturase activity indices, and coronary artery disease (CAD) severity remain incompletely understood. Methods: In this cross-sectional study, 61 patients undergoing coronary angiography for suspected CAD were evaluated. Coronary atherosclerotic burden was quantified using the Gensini score. AIP and the TyG index were calculated from fasting biochemical parameters. Plasma fatty acid composition was analyzed using gas chromatography–mass spectrometry, and estimated desaturase activity indices were calculated using product-to-precursor ratios. Results: AIP was independently associated with Gensini score (β = 37.020, p < 0.001), whereas the TyG index was not independently associated after adjustment for potential confounders (p = 0.101). In correlation analyses, AIP was positively correlated with HOMA-IR (ρ = 0.352, p < 0.05). Myristic acid was positively correlated with AIP, the TyG index, and VLDL (ρ = 0.297, 0.288, and 0.325, respectively; all p < 0.05), whereas n-6 polyunsaturated fatty acids were positively correlated with LDL (ρ = 0.276, p = 0.031). Among the estimated desaturase activity indices, D6D was positively correlated with AIP, BMI, insulin, and VLDL (ρ = 0.262, 0.376, 0.340, and 0.266, respectively; all p < 0.05), whereas D5D was inversely correlated with BMI and VLDL (ρ = −0.319 and −0.266, respectively; both p < 0.05). No significant associations were observed for SCD-16 or SCD-18. Conclusions: The observed associations between AIP, angiographic CAD severity, selected fatty acid species, and estimated desaturase activity indices suggest that AIP may provide complementary information regarding metabolic alterations associated with coronary atherosclerosis. These findings provide a basis for future studies exploring the relationship between composite atherogenic indices and fatty acid metabolism. Full article

Grape pomace is an agri-industrial by-product rich in fatty acids with the potential to be used in diets for goats and increase the nutraceutical properties of milk. This study aimed to investigate the effect of incorporating dehydrated grape pomace (DGP) into the diets of Saanen goats on the composition, fatty acid profile, nutritional indices of fatty acids, and antioxidant capacity of their milk. Eight multiparous Saanen goats, averaging approximately four years of age and weighing 41.2 ± 15.7 kg, were used in a double Latin square (4 × 4) design. Diets were formulated with increasing levels of grape pomace (0, 90, 150, and 210 g/kg Dry Matter—DM), replacing cactus. The data underwent analysis of variance using GLM procedure and regression analysis (both linear and quadratic) using REG procedure at a significant level of 5%. The concentration of C18:2 n-6 cis and C18:3 n-3 increased (+20.1 and +15.5%, respectively) with the grape pomace inclusion. There was a reduction in the atherogenic (−24.0%) and thrombogenic (−9.9%) indices of goat milk with the increase in DGP levels. There was a reduction in de novo fatty acids (−10.5%), Δ−9 desaturase of C14 (−21.8%) and C18 (−9.5%) indexes with the highest level of DGP. There was a quadratic effect for Ferric Reducing Antioxidant Power (FRAP) and a linear effect for phenolic compounds (PC), where the highest values were observed at the estimated levels of 160 g/kg and 210 g/kg DM, respectively. Supplementing dairy goats’ diets with dehydrated grape pomace up to 210 g/kg dry matter enhances the fatty acid profile and nutritional indices of fatty acids of Saanen goat milk without altering its basic composition. As grape production is prevalent in low rainfall regions, pomace may provide an alternative feed in areas with forage production constraints. Additionally, grape residue could establish a link between the wine and dairy sectors for cheese production, expanding markets for farmers. Full article

The quality of beef fat depends on both intramuscular fat (IMF) content and fatty acid (FA) composition, which can be modulated by finishing diets. This study evaluated the effects of silage type and feeding intensity on IMF deposition, FA profile, desaturase indices, and lipid quality indices in finishing Holstein–Friesian bulls. Thirty-two bulls were assigned to a 2 × 2 factorial design (n = 8/group) and fed total mixed rations for 120 days based on grass silage or maize silage, under intensive (≈50:50 forage:concentrate, DM basis) or semi-intensive feeding (≈70:30). FA composition of longissimus lumborum lipids was determined by GC-FID, and lipid quality indices were calculated, including the atherogenic index (AI), thrombogenic index (TI), and the hypocholesterolemic/hypercholesterolemic ratio (h/H). Feeding intensity increased IMF content (p = 0.001) and the absolute amounts of major FA classes (g/100 g meat). Silage type primarily affected FA composition by increasing n-3 PUFA and lowering the n-6/n-3 ratio in grass silage diets (p = 0.042). Several FAs showed silage type × feeding intensity interactions (p < 0.05), indicating that the response to dietary energy supply depended on the forage base. Overall, feeding intensity mainly regulated lipid deposition, whereas silage type modulated the nutritional profile of intramuscular fat. Full article

This study aimed to produce gluten-free cupcakes (GFCs) using a composite flour blend of Lepidium sativum seed mucilage (LSM) in different proportions. The GFCs substituted oil with 100% LSM (M100), revealing significant reduction in fat content (87.55%), protein 13.43 g/100 g, fiber 2.48 g/100 g, and carbohydrates 58.39 g/100 g. The M100 GFC showed favorable fatty acid ratios (1.80 MUFA:SFA, 0.95 PUFA:SFA, 0.97 omega 6:omega 9) and lipid health quality indices (0.72 atherogenicity index, 0.59 thrombogenic index, 1.39 health-promoting index, and 2.3% ∆desaturase index), with sensory acceptability at 7.07 ± 0.21. The LSM effectively replaced fat, enhanced functionality and improved sensory profiles 7.07 ± 0.21, suggesting its potential for industrial applications. Full article

The aim of the present study was to evaluate the association between seasonal variation, the temperature–humidity index (THI), and lipid indices related to human health in the milk of Simmental and Montbéliarde cows. The investigation was conducted on a dairy farm located in Central Southern Bulgaria over a 12-month period and included 100 lactating cows, with equal numbers from each breed, housed in semi-open free-stall barns and fed an unchanged total mixed ration. Monthly measurements of microclimatic parameters (temperature, relative humidity, THI, and air velocity) were conducted throughout the study, and composite milk samples were analyzed for fatty acid composition by gas chromatography. The atherogenic index (AI), thrombogenic index (TI), health-promoting index (HPI), hypo-/hypercholesterolemic index (h/H), desaturase indices (DI16 and DI18), and the UFA/SFA, PUFA/SFA, and MUFA/SFA ratios were calculated based on the fatty acid profile. The results indicate that season has a statistically significant effect on all studied lipid indices (p < 0.001). The Kruskal–Wallis H values ranged from 16.68 for AI to 27.82 for DI18, indicating that seasonal variations in microclimatic conditions significantly influence the lipid metabolism of the cows. The data for the studied lipid indices indicate that the most favorable fat profile for human health was observed in autumn, characterized by lower AI (2.24) and TI (1.26) values and higher HPI (0.45) and h/H (0.76) values. Seasonal variation also affected DI 16 and DI 18, with the most favorable values for humans observed in autumn (DI 16: 4.38; DI 18: 74.39). The ratios of unsaturated to saturated fatty acids (UFA/SFA, PUFA/SFA, and MUFA/SFA) indicate that the milk from the studied farm exhibits the most favorable functional properties in autumn. This paper investigates the influence of vegetable oils (sunflower oil (SO), rapeseed oil (RO), and linseed oil (LO)) supplemented into broiler diets on the fatty acids profile and quality of lipids in breasts and thighs, expressed through qualitative, nutritional, and metabolic indices. Broilers of the Ross 308 hybrid were divided into three groups and fattened over 6 weeks. During the last three weeks of fattening, broilers were fed a finisher diet that differed in types of supplemented oil. Diets were balanced at the level of 19.80% crude protein and 13.5 MJ ME/kg of feed. Feed and water were offered to broilers ad libitum. Fatty acid profiles were determined in samples of broiler breasts and thighs, based on which lipids health indices were calculated. Quantitative indices (polyunsaturated fatty acids-∑PUFA/saturated fatty acids-∑SFA, ∑PUFA n-6/∑PUFA n-3, linoleic acid-LA/α-linolenic acid-ALA, and eicosapentaenoic acid-EPA+ docosahexaenoic acid-DHA) were influenced by the type of oil (p < 0.001), whereas the type of meat was only important for the index of ∑PUFA/∑SFA (p < 0.001). Nutritional indices (nutritional value index-NVI, atherogenicity index-AI, thrombogenicity index-TI, hypo/hypercholesterolemic index-hHI, health-promoting index-HPI) depended on both factors (p < 0.001). The metabolic indices (elongase index-EI, thioesterase index-THI, ∆9-desaturase, ∆5 + ∆6-desaturase, kinetic activity index-KHI) were significantly affected by the type of meat (p < 0.001), as well as by the feeding treatments (p < 0.05), except for the EI index. This research confirmed that oils supplemented into broiler feed influence the fatty acid profiles in broiler meat. It has also been confirmed that the fatty acid profile affects the lipid quality in meat, which may be beneficial for consumers’ health. Full article

In this study, the effects of goat manure fertilization (2, 4, 8, and 12 Tn/ha) on the grain yield, organic compounds, and mineral composition of two quinoa varieties (CICA-17 and Regalona Baer) were evaluated under field conditions in Northwest Argentina. The results indicate that fertilization improved the quinoa grain yield and total protein content. Low manure doses positively affected the fatty acid (FA) profile, and significant changes were determined for the monounsaturated (MUFA) and polyunsaturated (PUFA) fatty acid contents of CICA-17 and on the saturated fatty acid (SFA) contents of R. Baer seeds. The amino acid contents were positively affected in CICA-17 and negatively in R. Baer. Soluble sugars (glucose, fructose, and sucrose), major elements (K, Si, P, Mg, Ca, and Na), minor elements (Fe, Mn, Al, Zn, and Cu), and ultratrace elements (Cr and Li) were detected and discussed in terms of their impact on human nutrition and health. Conclusively, manure addition affected some essential amino acids, the desaturase activity, the n6:n3 and SFA/UFA ratios, the atherogenic index, soluble sugars, and mineral content, and the fatty acid metabolism of each variety was differently affected, especially the C16 and C18 desaturase activity, which responded differently to various manure doses. Manure addition is a promising alternative to improve the nutritional quality and functionality of quinoa grains, but the response is not linear. Full article

The effects of the replacement of dry ground corn (GC) with corn-grain silage rehydrated with water (RCSwater), cactus pear mucilage (RCSmucilage), and whey (RCSwhey) on the growth, physicochemical composition, and fatty acid profile of goat kids’ meat were investigated. Thirty-two crossbred goat kids (16.4 ± 2.50 kg initial weight) were assigned in a randomized block design with four treatments and eight repetitions. The NDF intake of goat kids fed with RCSmucilage was higher in comparison to RCSwater and RCSwhey (p = 0.0009). The dietary replacement of GC by RCSmucilage increased the final weight (p = 0.033) and meat-cooking losses (p = 0.0001) of kids. The concentrations of oleic (p = 0.046), 11,14-eicosadienoic (p = 0.033), and EPA (p = 0.010) were higher in the meat of kids fed with RCSmucilage and RCSwhey, and the α-linolenic concentration was higher (p = 0.019) for animals feeding with RCSmucilage. Meat from kids fed with RCSwhey presented the lowest ∑SFA and the highest ∑MUFA. In contrast, the ∑PUFA (p < 0.012) was higher for goats fed with RCSwater. The ∑ω3 (p < 0.0001) was higher in animals fed with RCSmucilage and RCSwhey. Desirable fatty acids were higher (p = 0.044) in animals fed with RCSmucilage and RCSwhey, and the atherogenicity (p = 0.044) and thrombogenicity (p < 0.0001) indexes were lower for goats fed the RCSwhey diet. The enzymatic activities of Δ9desaturase (C16) were higher (p = 0.027) in goat kids fed with GC and RCSmucilage, and Δ9desaturase (C18) was higher (p = 0.0497) when goats were fed with RCSmucilage and RCSwhey. Elongase activities were higher (p = 0.045) in goat kids fed with GC and RCSwater. The total replacement of GC by RCSmucilage is recommended in the diet of goat kids due to improvements in the weight gain and proportion of desirable fatty acids in the meat. In addition, RCSmucilage promoted better conservation of the silage at a lower cost when compared to commercial additives. Full article

The nutritional value, growth performance, and lipid metabolism of sago palm weevil larvae (Rhynchophorus ferrugineus, SPWL) raised on plant-based diets (soybean, rice bran, and ground sago palm trunk (GSPT)), supplemented with various concentrations (0, 3, 7, 15, and 20%) of perilla seed (PS) were compared with traditional diets i.e., regular GSPT (control) and GSPT supplemented with pig feed. All supplemented diets rendered SPWL with higher lipid and protein contents (p < 0.05). Supplementing with 7–20% PS enhanced α-linoleic acid content in SPWL, resulting in a decrease in the n-6:n-3 ratio to a desirable level. Dietary PS supplementation increased Δ9 (18), total Δ9 and Δ5 + Δ6 desaturase indexes, fatty acid (FA) unsaturation, and the polyunsaturated FA:saturated FA ratio in SPWL, while lowering atherogenicity index, thrombogenicity index, and Δ6 desaturase (fads2) gene expression. Boosting with 7% PS improved the majority of growth parameters and enhanced essential amino acid and mineral contents (p < 0.05). Full article

The study aimed to investigate the effect of supplementation of fish oil after the process of low-temperature crystallization (LTC-FO) enriched with long-chain polyunsaturated fatty acids (LC-PUFAs) on cow milk parameters. The experiment was carried out on 24 Polish Holstein Friesian cows. For 4 weeks, experimental (EXP) group animals (n = 12) were fed LTC-FO (1% of dry matter). Milk was collected two times: on days 14 and 30. LTC-FO supplementation decreased milk fat yield and concentration (p < 0.01). Higher levels of polyunsaturated fatty acids (PUFAs), including these with beneficial biological properties, i.e., eicosapentaenoic (EPA), docosahexaenoic (DHA), docosapentaenoic (DPA), CLA, alpha-linolenic acid (ALA), and TVA (p < 0.01), and lower levels of SFAs, especially short- (p < 0.01) and medium-chain ones (p < 0.05, p < 0.01), were found in the EXP group. The addition of LTC-FO reduced the value of atherogenic and thrombogenic indices as well as SFA/UFA and n-6/n-3 ratios and increased the content of n-3 PUFA and functional fatty acids (p < 0.01). The addition of LTC-FO also increased the delta-9 desaturase index for CLA/TVA and decreased it for pairs C14:1/C14:0 and C16:1/C16:0 (p < 0.05, p < 0.01). Full article

The aim of the study was to examine the effect of dietary supplementation of isomerized poppy seed oil (IPO) enriched with conjugated dienes of linoleic acid (CLA) on cow and sheep milk parameters (fat content, fatty acid profile, Δ9-desaturase index, and atherogenic index). The process of poppy seed oil alkaline isomerization caused the formation of CLA isomers with cis-9,trans-11, trans-10,cis-12, and cis-11,trans-13 configurations in the amounts of 31.2%, 27.6%, and 4.1% of total fatty acids (FAs), respectively. Animal experiments were conducted on 16 Polish Holstein Friesian cows (control (CTRL) and experimental (EXP), n = 8/group) and 20 East Friesian Sheep (CTRL and EXP, n = 10/group). For four weeks, animals from EXP groups received the addition of IPO in the amount of 1% of dry matter. Milk was collected three times: on days 7, 14, and 30. Diet supplementation with IPO decrease milk fat content (p < 0.01). Milk fat from EXP groups had higher levels of polyunsaturated fatty acids, including FAs with beneficial biological properties, that is, CLA and TVA (p < 0.01), and lower levels of saturated fatty acids, particularly short- (p < 0.01) and medium-chain FAs (p < 0.05).
