Special Issue Information

Dear Colleagues,

Natural components of food, especially polyphenols, may play an essential role in preventing different diseases. Nowadays, natural substances seem to be interesting due to their effects of antioxidative stress, which is potentially connected with many diseases, such as cancer, diabetes and neurodegenerative disease, as well as other illnesses. Research on bioactive agents contained in food has been conducted for many years. Moreover, their impact on the health of humans has been proven.

Polyphenols are a large group of chemical compounds found in food. These constituents occur in fruits, tea, coffee, cocoa, herbs, spices, and bee products, which are rich sources of these compounds. Besides polyphenols, volatile compounds are found in plants and their aroma and significant biological activity determine their importance for natural products used as food additives. Volatile oils are used in the food industry as flavoring additives and spices. Bee products are sources of volatile compounds and polyphenols.

This Special Issue will aim to estimate bioactive compounds in food as well as toxic chemical compounds. Food may be a source of compounds with risks to human and animal health such as cyanogenic glycosides, furocoumarins, lectins, mycotoxins or pyrrolizidine alkaloids. In recent years, we have observed development in food analytical methods. Therefore, this Special Issue will present the application of analytical methods to ensure of quality of food.

This Special Issue will focus on presenting review and research articles showing the impact of food components as well as diet on health risks and benefits.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Applied Sciences is an international peer-reviewed open access semimonthly journal published by MDPI.
