Special Issue Information

Dear Colleagues,

Aquaculture has made a significant contribution to meeting the sustainable human food requirement for high-quality protein. However, the aquaculture industry faces many challenges, such as limited feed resources, fish gut/liver health, fillet quality, and water pollution, among others. A comprehensive understanding of the lipid metabolism mechanism in fish is a promising approach to address these issues, as increasing lipid utilization can conserve expensive protein and reduce water pollution. Additionally, modulation of lipid metabolism can enhance gut/liver performance, fillet quality, and taste/flavor. Therefore, the scope of our study focuses on (including but not limited to) (1) the mechanism of lipid metabolism, encompassing lipid digestion/absorption, turnover, de novo synthesis, degradation, etc.; (2) the relationship between lipid metabolism and fish health, such as interactions with viruses/pathogens/parasites and inflammatory responses; (3) the interaction of lipids with other factors, including proteins/carbohydrates/minerals and water environmental factors; (4) the exploitation of lipid resources, such as fish oil, vegetable oil, algal oil, and fermented oil.
