Dear Colleagues,
Carbohydrates are important components in our diets, and they play critical roles in diverse aspects in human health. Their physicochemical properties and bio-functions are highly related to structural features. Generally, dietary fibers of large molecular weight act as the textural modifier in food processing and show activities like digestion resistance. Fiber fragments produced by proper degradation usually possess better solubility and enhanced permeability in the physiological environment, thus presenting interesting bio-activities such as adjusting the immune system. Oligomers, in both natural and synthetic forms, have been frequently investigated as prebiotics and sugar substitutes aiming to improve the benefits of foods. Moreover, derivatives including sugar alcohols, glycosides, and uronic acids receive rising concerns for their diverse and even unexpected effects. Undoubtedly, there is a great request to design and create novel carbohydrates with new properties, or to develop clean processing technologies with lower cost and higher efficiency. Bioconversion of food carbohydrates is a mild procedure catalyzed by enzymes or achieved by fermentation. So far many successful cases have been reported and amazingly changed our lives, nevertheless, more powerful and specific bio-tools are urgently required—for instance, the isomerases, epimerases, transferase, and ideal strains for industrial operations. Moreover, advanced approaches such as Bioinformatics and Synthetic biology have brought new strategies besides the traditional methods.
