Special Issue Information
Dear Colleagues,
This Special Issue proposal would like to cover a significant gap still present in the scientific literature. Medium and high processed foods could be particularly affected by microplastic contamination as not only the plastic packaging, but also the food process itself could be an important source of microplastics for foods. Further, due to the very high frequency of processed food consumption by humans, it is very relevant to conduct an in-depth investigation of the pathways through which microplastics could affect human health. Such a topic is, in fact, still scarcely investigated due to the complexity of the mechanisms of digestion. Furthermore, how microplastics could be adsorbed by human cell lines after being ingested with foods is not clear yet. Therefore, this Special Issue would like to cover two different topics which are completely interconnected, as the occurrence of microplastics in foodstuff (particularly medium and high processed ones) is of interest because of their likely effect on humans.
