Special Issue Information

Dear Colleagues,

The demand for natural and healthier products constantly increases. Plant extracts can be used as natural substitutes of products, such as antioxidants, colorants, sweeteners, thickeners, and others. Moreover, at the same time, plant extracts are used as food supplements to improve and maintain human health. However, there are still many plant species that need to be explored, to find new plant products and/or to increase the use of the already existing. Scientists are working on the development and improvement of the methods of extraction in a search of more environmentally friendly processes, including the use of less harmful solvents.

In this context, the main scopes of the present Special Issue are plant extracts and the corresponding methods of extraction and analysis for identification of the bioactive compounds present in the extracts as well as their possible bioactivities (antioxidant, antimicrobial, anti-inflammatory, etc.). Both original research article and reviews are welcome.

All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
