Dear Colleagues,

Functional polysaccharides are increasingly recognized for their role in enhancing food formulations, especially in promoting gut health and strengthening immunity. These natural compounds, sourced from plants, fungi, and marine organisms, possess immunomodulatory, antioxidant, and blood sugar-lowering properties. Their prebiotic effects foster the growth of beneficial gut microbiota, which in turn improves digestive health and bolsters the immune system. Incorporating functional polysaccharides into food design can elevate nutritional value, offering targeted health benefits such as immune support and glycemic regulation. Moreover, their antioxidant capabilities help combat oxidative stress, a factor in chronic diseases and aging. The inclusion of these polysaccharides in food products not only delivers health benefits but also caters to the growing demand for functional foods. This strategy not only harnesses their bioactive properties for preventive healthcare but also drives innovation in food design, meeting the needs of health-conscious consumers.
