Special Issue Information
Dear Colleagues,
Food additives play an important function in the manufacture, processing, packaging, and storage of food. Food ingredients are added in order to improve the safety, shelf-life, freshness, taste, texture, and appearance of food. Although food additives such as salt have been widely used for centuries for food preservation, their use is met with suspicion by many consumers that view food ingredients as unnatural and unhealthy. This risk perception is influenced by knowledge of legislation granting their safety and trust in regulators. At present, public awareness of the scientific activities and existing regulations enforced to protect consumers’ health from potential risks related to the use of food additives is low. This Special Issue will provide a platform to present and discuss scientific and regulatory approaches enforced in different regions of the world for exposure and safety assessment of food additives. It is hoped that this publication, based on current evidence and scientific knowledge, will contribute to enhance information on food additive use, consumer exposure, and health risks.

Toxics is an international peer-reviewed open access monthly journal published by MDPI.
