Background/Objectives: While the prevalence of depression increases during the peri- and post-menopausal periods, the potential of diet as both a modifiable risk factor and complementary treatment option has received limited research attention in this population. To address this gap, we conducted a scoping review aiming to map and synthesize the existing literature on diet and depression in peri- and post-menopause. Methods: Studies were identified through Medline, EMBASE, PsycINFO, CENTRAL, Web of Science, and Scopus. After deduplication in Covidence, two reviewers independently screened titles, abstracts, and full texts using predefined eligibility criteria. Data were extracted using standardized forms and presented in tables and figures. Methodological quality was assessed using the Cochrane RoB-2 for intervention studies and NHLBI tools for observational studies. Results: Thirty-eight studies met the inclusion criteria, including 29 observational and 9 interventional studies. Dietary patterns showed the most consistent associations with depressive symptoms, whereas findings for foods, nutrients, and other food components were inconsistent. Most observational studies had a moderate to high risk of bias, while over half of experimental studies were rated as low risk. Conclusions: Although limited by volume and poor methodological quality, existing evidence suggests that healthy diets may be protective against depressive symptoms in peri- and post-menopausal women, while unhealthy diets may increase risk. High-quality cohort studies and clinical trials are needed to guide future research and inform professionals working at the intersection of nutrition, psychiatry, and women’s health. Postprandial hyperglycemia, marked by the blood glucose level exceeding the normal range after consuming a meal, is a critical indicator of progression toward type 2 diabetes in people with prediabetes and in healthy individuals. A key metric for understanding blood glucose dynamics after eating is the postprandial Area Under the Curve (AUC). Predicting postprandial AUC in advance based on a person’s lifestyle factors, such as diet and physical activity level, and explaining the factors that affect postprandial blood glucose could allow an individual to adjust their behavioral choices accordingly to maintain normal glucose levels. In this work, we develop an explainable machine learning solution, GlucoLens, that takes sensor-driven inputs and utilizes advanced data processing, large language models, and trainable machine learning models to estimate postprandial AUC and predict hyperglycemia from diet, physical activity, and recent glucose patterns. We use data obtained using wearables in a five-week clinical trial of 10 adults who worked full-time to develop and evaluate the proposed computational model that integrates wearable sensing, multimodal data, and machine learning. Our machine learning model takes multimodal data from wearable activity and glucose monitoring sensors, along with food and work logs, and provides an interpretable prediction of the postprandial glucose patterns. GlucoLens achieves a normalized root mean squared error (NRMSE) of 0.123 in its best configuration. On average, the proposed technology provides a 16% better predictive performance compared to the comparison models. Additionally, our technique predicts hyperglycemia with an accuracy of 79% and an F1 score of 0.749 and recommends different treatment options to help avoid hyperglycemia through diverse counterfactual explanations. With systematic experiments and discussion supported by established prior research, we show that our method is generalizable and consistent with clinical understanding. Full article

Fruits and vegetables are essential for a healthy diet, providing vital nutrients and contributing to global food security. Fungal pathogens that interact with fruits and vegetables reduce their quality and shelf life and lead to economic losses and risks to human health through the production of mycotoxins. Chemical fungicides, used to control postharvest pathogens, are posing serious environmental and health risks, driving interest in safer alternative strategies. Biocontrol methods using antagonistic microbes, such as yeasts, are eco-friendly, sustainable, and the most promising, but they often have limited efficacy and specificity in diverse produce. There is growing interest in the innovative enhancement of biocontrol strategies. The present review shows that inducing, enhancing, co-application, encapsulation, and post-application treatments are common enhancement techniques, while environmental, host, and pathogen characteristics, antagonistic microbial traits, and chemical inputs are the major gearing factors for the best application methods. These methods do not involve genetic modification, which is adequate to reduce the proliferation of GMOs (Genetically Modified Organisms) while optimizing antagonistic microbial performance by promoting growth, inducing host resistance, enhancing antifungal properties, improving adhesion, and boosting stress tolerance. Most enhancers fall under groups of nutritional additives, protective carriers, growth stimulants, and encapsulants. Integrating these enhancers and best methods promises reduced postharvest losses, supports sustainable agriculture, and addresses economic losses and food security challenges. This study highlights the role of organic and natural elicitors, their application methods, their mechanisms in improving BCAs (Biological Control Agents), and their overall efficiency. This review concisely compiles recent strategies, calling for further research to revolutionize fungal pathogen management, reduce food waste, and promote responsible farming practices. Full article

Fermentation has been a crucial process in the preparation of foods and beverages for consumption, especially for the purpose of adding value to nutrients and bioactive compounds; however, conventional approaches have certain drawbacks such as not being able to fulfill the requirements of the ever-increasing global population as well as the sustainability goals. This review aims to evaluate how the application of advanced fermentation techniques can transform the food production system to be more effective, nutritious, and environmentally friendly. The techniques discussed include metabolic engineering, synthetic biology, AI-driven fermentation, quorum sensing regulation, and high-pressure processing, with an emphasis on their ability to enhance microbial activity with a view to enhancing product output. Authentic, wide-coverage scientific research search engines were used such as Google Scholar, Research Gate, Science Direct, PubMed, and Frontiers. The literature search was carried out for reports, articles, as well as papers in peer-reviewed journals from 2010 to 2024. A statistical analysis with a graphical representation of publication trends on the main topics was conducted using PubMed data from 2010 to 2024. In this present review, 112 references were used to investigate novel fermentation technologies that fortify the end food products with nutritional and functional value. Images that illustrate the processes involved in novel fermentation technologies were designed using Adobe Photoshop. The findings indicate that, although there are issues regarding costs, the scalability of the process, and the acceptability of the products by the consumers, the technologies provide a way of developing healthy foods and products produced using sustainable systems. This paper thus calls for more research and development as well as for the establishment of a legal frameworks to allow for the integration of these technologies into the food production system and make the food industry future-proof. Background/Objectives: Dairy and soybean are important potential dietary sources of bone health. However, their comparative effectiveness and the role of specific components remain unclear. In this network meta-analysis (NMA), we aimed to compare the effects of various dairy and soy products (food level) and their key bioactive components (component level) on bone health in healthy women. Methods: We systematically searched PubMed, Embase, Cochrane Library, and Web of Science (up to 28 February 2025) for randomized controlled trials. A frequentist random-effects NMA was used to compare interventions for lumbar spine (LS) and total body (TB) bone mineral density (BMD) and bone turnover markers [osteocalcin (OC), deoxypyridinoline (DPD)]. Mean differences (MDs) and 95% confidence intervals were pooled. Interventions were ranked using the surface under the cumulative ranking curve (SUCRA). Results: Sixty RCTs involving 6284 participants (mean age: 54.2 years) were included. At the food level, no dairy or soy interventions significantly improved outcomes versus control, although milk + yogurt ranked numerically highest based on SUCRA values. At the bioactive-component level, the combination of casein + whey protein (MD 0.04 g/cm2, 95% CI 0.01–0.06) and soybean protein (MD: 0.03 g/cm2, 95% CI: 0.01–0.05) significantly increased TB BMD. Whey protein alone (SUCRA 74.4% for LS BMD) and casein + whey protein (SUCRA 86.3% for TB BMD and 75.9% for DPD) were among the highest-ranked interventions for bone health. Conclusions: The combination of milk and yogurt may be relatively promising among dairy products for bone health. Whey protein appears to be a key bioactive component beneficial for women’s bone health. Full article

With the growing emphasis on healthy eating and nutrition management in modern society, food image recognition has become increasingly important. However, it faces challenges such as large intra-class differences and high inter-class similarities. To tackle these issues, we present a Food Feature Fusion Network (FFFNet), which leverages a multi-head cross-attention mechanism to integrate the local detail-capturing capability of Convolutional Neural Networks with the global modeling capacity of Vision Transformers. This enables the model to capture key discriminative features when addressing such challenging food recognition tasks. FFFNet also introduces self-supervised clustering, generating pseudo-labels from the feature space distribution and employing a clustering objective derived from Kullback–Leibler divergence to optimize the feature space distribution. By maximizing similarity between features and their corresponding cluster centers, and minimizing similarity with non-corresponding centers, it promotes intra-class compactness and inter-class separability, thereby addressing the core challenges. We evaluated FFFNet across the ISIA Food-500, ETHZ Food-101, and UEC Food256 datasets, attaining Top-1/Top-5 accuracies of 65.31%/88.94%, 89.98%/98.37%, and 80.91%/94.92%, respectively, outperforming existing approaches. Nowadays, the consumption of “free from” foods by non-specific consumers is increasing, partly due to a misperception of labels that make them seem healthier. These foods are formulated for consumers with allergies or diseases that limit their diet, and it is not known if there are more benefits than risks for healthy consumers. For example, there is no work investigating the interaction between lactose-free milk and the colonic microbiome of healthy individuals. To focus on the potential modulation of gut microbiota of healthy subjects by lactose-free milk, we performed an in vitro simulation of digestion and fermentation, integrating microbiomics and metabolomics approaches to study changes in gut microbiota populations and metabolite production. Results indicated that lactose-free and lactose-containing milk differently modulated colonic microbiota based on several microbiological indicators, including the reduction in Bifidobacteriaceae (approximately more than two times) and Lactobacillales and the reduction in the beneficial production of microbial compounds (approximately six times less acetic acid and two times less butanoic acid). Such features suggest that lactose-free milk increases the risk of dysbiosis in healthy subjects. Our work identifies the drivers of this dysbiosis among hundreds of molecules and microbes of the gut microbiota, assigning specific names and ecological niches for the first time. It employs an in vitro model, which represents a new standard for sustainable research and improves translatability. Our findings support the European Society for Clinical Nutrition and Metabolism (ESPEN) guidelines, which do not recommend the routine consumption of lactose-free diets in the absence of diagnosed intolerance. Background: Pelemir (Cephalaria syriaca) is a bitter-tasting ancestral legume with a high polyphenol content and emerging potential as a functional food ingredient. This study investigated the acute metabolic effects of pelemir-enriched bread in adults. Methods: In this two-phase non-randomized trial, 60 participants in three groups (n = 20 per group: healthy controls [HCs], individuals with obesity [OB], and individuals with type 2 diabetes [T2D]) consumed regular or pelemir-enriched bread on two separate test days. Postprandial glucose, insulin, C-peptide, GLP-1, PYY, ghrelin, leptin, triglyceride, and IL-6 were measured over 120 min. Subjective appetite ratings were evaluated using visual analog scales (VASs). The incremental area under the curve (iAUC) values were compared using Wilcoxon tests and linear mixed-effects models. Results: Pelemir-enriched bread significantly increased iAUCs for insulin (p = 0.014), C-peptide (p = 0.046), and GLP-1 (p = 0.039) compared to regular bread. There was no significant change in iAUC for glucose. Group-stratified analyses showed a higher postprandial iAUC of glucose, insulin, and C-peptide in the OB group compared to the HC group. VAS-based appetite ratings did not show significant changes in hunger, fullness, or desire to eat, but a borderline significant reduction was observed in prospective food consumption after pelemir-enriched bread (p = 0.050). Conclusions: Acute consumption of pelemir-enriched bread may modulate postprandial insulin and incretin responses. Its modest impact on subjective appetite regulation supports further investigation of pelemir as a functional food rich in polyphenols, especially in populations with metabolic dysfunction. Background: The fetal period is critical for neurodevelopment, with maternal diet emerging as a key environmental factor influencing long-term child health. This study investigated the associations between maternal dietary patterns during pregnancy and neurocognitive and behavioral outcomes in 4-year-old children, with a particular focus on sex-related differences. Methods: We used data from the Piccolipiù Italian birth cohort, including 2006 mother/child pairs. Maternal dietary intake during pregnancy was assessed via a questionnaire and categorized into distinct patterns using Principal Component Analysis (PCA). Child neurodevelopment was evaluated at age 4 using the Wechsler Preschool and Primary Scale of Intelligence (WPPSI) and the Child Behavior Checklist (CBCL 1.5–5). Linear and logistic regression models were employed, adjusting for potential confounders and stratifying by child sex. Results: Two major maternal dietary patterns were identified: “Processed and high-fat foods” and “Fresh foods and fish”. Higher maternal adherence to the “Processed and high-fat foods” pattern was associated with increased externalizing behaviors in offspring (β = 0.88; 95%CI 0.28–1.49; p = 0.004). In males, this pattern was associated with an increased clinical risk of Attention Deficit Hyperactivity Disorder (ADHD) (OR (Odds Ratio) = 1.13; 95%CI: 1.02–1.26; p = 0.021). Conclusions: Our findings indicate that maternal consumption of a diet rich in processed and high-fat foods during pregnancy is associated with increased behavioral problems in children, with sex-specific vulnerabilities: slightly higher externalizing behaviors in girls and an increased risk of ADHD in boys. These results underscore the importance of promoting healthy maternal dietary patterns during pregnancy as a targeted early prevention strategy for supporting child neurodevelopment. Full article

Objectives: Despite the importance of food environments in shaping dietary behaviors and diet-related noncommunicable diseases, no standardized and validated method has been used to assess this policy domain in China. This study aimed to benchmark China’s food retail policies against international benchmarking to identify implementation gaps and propose evidence-based strategies for improving food environments. Methods: Using the standardized and validated Healthy Food Environment Policy Index (Food-EPI), we assessed four food retail indicators: restrictive zoning for fast-food outlets (RETAIL 1), healthy food accessibility (RETAIL 2), institutional support systems (RETAIL 3), and food service promotion (RETAIL 4). A multidisciplinary expert panel (n = 13) from academia, public health, and industry conducted structured assessments using a standardized scoring tool (1–5). Scores were converted to implementation percentages and categorized into four levels. Descriptive statistics (frequencies, percentages, and mean ± SD) were summarized. Results: Sixteen food retail policies were analyzed, with 62.5% (n = 10) of provincial policies focusing on fast-food zoning and healthy food access, and 37.5% (n = 6) of national policies targeting government support and healthy food promotion. Regulations comprised 55% (n = 11), mainly addressing zoning and access, while guidelines accounted for 45% (n = 9), primarily promotional. Overall, the food retail domain was rated as low level (2.3 ± 1.1, 45.8% implementation). Among the four indicators, healthy food access in outlets (2.6 ± 1.3, 52.4%) and promotion of healthy food in services (2.5 ± 1.0, 50.8%) were at medium implementation levels. In contrast, local fast-food zoning restrictions (1.7 ± 0.6, 33.8%) and government support for healthy food (2.3 ± 1.1, 46.2%) remained at low levels. Conclusions: China’s food retail policies showed inconsistent implementation levels, with strong provincial execution in accessibility and promotion but weak national coordination in zoning and support systems. To align with the WHO and China’s goals, priorities are unified national frameworks, enforceable standards, equity-focused monitoring, and strengthened multi-sector collaboration. Full article

Dromedary camels raised under semi-extensive management can act as One Health sentinels for environmental exposures and food chain surveillance, yet serum reference information remains scarce. Our objective was to provide the most comprehensive assessment to date of physiological and toxicological serum profiles in dromedary camels (Camelus dromedarius) from the Canary Islands. We included 114 clinically healthy animals of different sex, age, and reproductive status. Serum samples were analyzed for essential, toxic, and potentially toxic elements using inductively coupled plasma mass spectrometry (ICP-MS). In addition, a high-throughput multi-residue method based on QuEChERS extraction followed by UHPLC-MS/MS and GC-MS/MS was used to screen for 360 organic compounds, including pesticides, veterinary drugs, human pharmaceuticals, and persistent organic pollutants. Essential elements showed biologically consistent variations according to sex, age group, and pregnancy status. Males had higher levels of selenium and copper, while calves showed elevated concentrations of manganese and zinc. Pregnant females exhibited lower iron, zinc, and selenium levels, consistent with increased fetal demand. These results provide preliminary reference values for healthy camels, stratified by physiological status. In contrast, classical toxic elements such as arsenic, mercury, lead, and cadmium were found at very low or undetectable concentrations. Several potentially toxic elements, including barium, strontium, and rare earth elements, were detected sporadically but without toxicological concern. Only 13 organic compounds (3.6%) were detected in any sample, and concentrations were consistently low. The most prevalent was the PAH acenaphthene (55.3%), followed by the fungicide procymidone and the PAH fluorene. Notably, no residues of the usually detected 4,4′-DDE or PCB congeners were found in any sample. These findings confirm the low environmental and dietary exposure of camels under low-intensity farming systems and highlight their value as sentinel species for food safety and environmental monitoring. Background: The increasing use of food supplements (FSs) and the knowledge gaps among healthcare professionals (HPs) and non-healthcare professionals (nHPs) in Portugal regarding their influence on dietary patterns and health need investigating. This study aimed to explore FS users’ lifestyle and dietary patterns, identifying differences and how professional background influences these patterns. Methods: A cross-sectional study was conducted among 1122 Portuguese adults aged 35 ± 14.0 yrs (between 18 and 85), via snowball sampling, collecting data on sociodemographic characteristics, dietary patterns, FS use, and health attitudes. Cluster analysis (k-means) revealed four patterns: (1) professional supplement users with a healthy diet (PSHD), (2) professional non-supplement users with a less healthy diet (PnSLHD), (3) non-professional supplement users with a healthy diet (nPSHD), and (4) non-professional non-supplement users with a less healthy diet (nPnSLHD). Logistic regression assessed associations with lifestyle traits. Results: Significant sociodemographic differences existed between HPs and nHPs. Higher nutritional knowledge and nutritionist recommendations were strongly associated with a healthier diet and FS use (PSHD, nPSHD). Smoking was associated with less healthy patterns (PnSLHD, nPnSLHD). Among nHPs, males were significantly more likely to belong to the nPSHD group (OR: 1.61) compared to females (OR: 0.61). Distinct dietary and lifestyle patterns among Portuguese FS users and non-users vary by background. Conclusions: The findings suggest that FS users often maintain healthier lifestyles, indicating that FSs typically supplement rather than compensate for poor habits. Full article

Hairless canary seed (Phalaris canariensis L.) can play significant roles in human health and nutrition due to its unique nutrient profile. It belongs to the Gramineae family similar to common cereal grains like wheat, rice and corn. On the other hand, the traditional canary seed is characterized by the presence of silicified spicules or hairs on the hulls of the kernel that could pose health hazards to humans. The hairless canary seed was developed in Canada by a conventional breeding program to mitigate the health concerns associated with the silicified hairs. The hairless grain is silica free, i.e., totally glabrous, and is granted regulatory food approvals by Health Canada and US-FDA. The hairless grain holds a great potential as a whole grain functional food ingredient due to its unique nutritional and functional attributes. As a cereal grain, it is rich in protein that is non-gluten and exceptionally high in tryptophan and bioactive peptides. The grain also contains reasonable amounts of carotenoids, polyphenols, and healthy unsaturated oil. Because of these special characteristics, it is considered a promising nutritious and therapeutic food. This review provides insights into the potential of hairless canary seed as a functional ingredient in products designed to mitigate oxidative stress, diabetes and celiac disease and/or to improve vision and cognition. Farm-to-school (F2S) partnerships connect schools with local producers to enhance student access to healthy, local foods and support regional food systems. Despite widespread implementation, few studies have examined the system-level structures that facilitate effective and sustainable F2S efforts across diverse community contexts. This study utilized a mixed-methods system mapping approach to analyze four F2S systems on California’s Central Coast. Data sources included public data sources, in-person site observations, and local expert resources. The researchers hypothesized that successful F2S systems would share core features that support implementation and long-term sustainability, including aligned values among stakeholders, the presence of identified champions, and multi-directional pathways for food procurement and communication. They constructed system maps and compared them in order to identify both common structural features and context-specific adaptations. Findings support the hypothesis and highlight the critical role of community-based organizations and distributors and/or aggregators in brokering relationships, coordinating resources, and reducing administrative burdens. Institutionalization through wellness policy integration and district-level support further distinguished higher-functioning systems. Identified barriers included inequities in procurement infrastructure, limited funder engagement, and uneven access to local food sources. System mapping offers a valuable tool to understand, strengthen, and scale equitable F2S implementation. Full article
