Dear Colleagues,
Polysaccharides are one of the most important members of the biopolymer family. Polysaccharides and their derivatives have excellent biocompatibility, biodegradability, low toxicity and renewable prospects, and therefore polysaccharide-based derivatives have received extensive attention and research. Thus, they play a key role in a large number of research areas: cosmetics, food, biopharmaceuticals, 3D printing, construction, fuels, etc. However, due to its complex structure and unclear mechanisms of biological activity, polysaccharides and their derivatives still need further research. Currently, the traditional modification methods mainly include carboxymethylation, acetylation, selective oxidation, “click” reaction and polymer grafting due to the presence of functional groups such as hydroxyl (-OH) or carboxyl (-COOH) groups. Polysaccharides can be chemically or enzymatically modified to alter physical and chemical properties, forming structures such as vesicles, micelles and hydrogels.
This Special Issue is devoted to the most recent research on these topics, covering all the aspects concerning the structural modification and application of polysaccharides.

Polymers is an international peer-reviewed open access semimonthly journal published by MDPI.
