Comments and Suggestions for Authors

This paper presents the findings from a study to design a novel method for predict frozen Zhoushan hairtail quality, using carbonyl content, sulfhydryl content, TBARS and Ca2+-ATPase activity, measured at different storage temperatures (-7°C, -13°C, -18°C and -23°C) and storage days (around 120 days) using hairtails from the East China Sea waters of Zhoushan City, Zhejiang Province. Combined with the K-Means++ algorithm, the authors have constructed a hierarchy of hairtail quality and predicted its quality using the ETSFormer model. Through the validation of the self-constructed dataset, the author's model has achieved good results in predicting the low, medium, and high quality of hairtails, as described in figures 12-19. I believe there is much merit to the data presented in this paper and the findings are very consistent, and this method can represent important tool for evaluation of Zhoushan hairtail shelf-life. However, problems were observed in the manuscript, fact that compromises its publication thereby. I would encourage the authors to adjust the manuscript to publish it in this important journal. In this context, the following comments should be addressed:

- The main problem observed in the manuscript, the authors do not discuss the relevance of their scientific findings, as well as their importance.

- Figures 4 to 7 clearly show the influences that the temperatures exerted on the studied parameters, mainly TBARs and carbonyl content. Is there a statistical difference between them? Such findings are relevant and should be discussed in the paper.

- Figures 9, 10, and 11 show the results of the indicators according to the quality of the fish as high, medium, and low, respectively. The authors should discuss the variations observed between them, as they are very clear, as well as how they should be correlated with the findings as a whole and whether they could somehow influence the proposed prediction model.

- Tables 2, 3, and 4 as presented are illegible (confusing), as it would be necessary to format them so that the values presented remain on their respective lines and allow readers to better interpret the findings.

- In the proposed model, only variations in fish muscle quality parameters were presented to predict their quality during cold storage. In my point of view, the microbiological quality of the fish would significantly influence their shelf life, mainly because the fish may contain different microorganisms and in different quantities (significantly varying their hygienic-sanitary qualities), which would significantly influence their quality for consumption. The authors must highlight these issues in their study, and their relevance in relation to the proposed prediction model. These points should be widely discussed by the authors, as they are very relevant issues within the scope of this manuscript.

Comments and Suggestions for Authors

Dear authors,

The manuscript entitled "Quality Prediction of Frozen Zhoushan Hairtails in China Based on ETSFormer" aimed to technical support and scientific basis for evaluating the quality grade of hairtails and predicting the change of quality grade. It presents scientific relevance for the area of Food area.

After consulting www.sciencedirect.com and https://pubmed.ncbi.nlm.nih.gov/, publications were found for some authors involving the theme. However, you need to change some details/information in Introduction and discussion.

It is well written, but I suggest:

-          in the introductory part, the information is provided informatively. I recommend, if possible, to try an analysis of the information. Forms such as author et al. line 69, line 72, line 76, line 80, line 84 and others are redundant.

-           line 301: Table 1. and line 378: table 2 Normalized clusters. I suggest adding footnotes explaining the terms

-          line 359: Figure 19.  moves to additional material
