Special Issue Information

Dear Colleagues,

Intensive research on the metabolic role of oxygen has shown that this life-giving substance can also be toxic, causing many disruptions in the body. In the fight for survival, organisms are equipped with special defence mechanisms that help eliminate these disturbances or prevent them from occurring. Unfortunately, these natural defence mechanisms are not sufficient and must be supported by substances supplied with food.

During a lifetime, a person consumes about 30 tons of food and drinks rich in many substances. Their main source is raw materials and food of plant origin. Valuable plant components are polyphenols. Their effect on the human body is multidirectional. In addition to their antioxidant effect, they have a beneficial effect on the cardiovascular system and the immune system. They also exhibit anticancer, antiviral, antibacterial and antifungal properties.

We invite researchers to propose reviews or original research articles on the beneficial properties, including the antioxidant properties, of these compounds. We look forward to receiving your comments and supporting meaningful discussions in this important area of research. Your participation and contributions are crucial to enriching knowledge and gaining new insights in this field.
