Antioxidants invites you to contribute to a Special Issue dedicated to the latest advancements in antioxidant activity and polyphenol extraction. Polyphenols, powerful antioxidants found in plant matrices, play a crucial role in protecting cells from oxidative stress by neutralizing free radicals and reactive oxygen species (ROS). This protection is vital for promoting healthy aging and preventing various diseases.
In light of the growing interest in integrating sustainable and efficient extraction and purification methods, this Special Issue seeks to highlight innovative approaches that push the boundaries of current antioxidant research. We encourage the submission of reviews or original research articles that explore new methodologies and technologies designed to enhance the efficiency, selectivity, and sustainability of polyphenol extraction.

Innovative Extraction Techniques, such as the following:
- Hot pressurized liquid extraction;
- Microwave-assisted extraction;
- Enzyme-assisted extraction;
- Ultrasound-assisted extraction;
- Deep eutectic solvents;

- Macroporous resin adsorption;
- Microporous resin adsorption;
- Adsorption preparative liquid chromatography;
- Membrane technologies;
- Two-phase aqueous systems.
Application technologies, such as the following:
- Integration of selective separation processes;
- Microencapsulation;
- Incorporation into edible films and coatings;
- Hydrogel delivery systems;
- Nanoemulsions.
We particularly welcome papers that introduce novel approaches to antioxidant activity assessment. This could include cutting-edge analytical techniques for evaluating the effectiveness of polyphenols in various applications, from food preservation to pharmaceuticals.
This Special Issue represents a unique opportunity to contribute to the evolution of antioxidant research. By addressing the limitations of traditional methods—such as environmental impact, low yields, poor selectivity, and decreased bioavailability—these innovative approaches offer promising solutions that can significantly advance the field.
