Section Information

Tea, coffee, and water are the most widely consumed beverages around the world. This Section covers specifically these beverages, evaluated by trained panels, experts, or naïve consumers. Chemical and physical characterization utilizing instrumental analyses is of interest when paired with human evaluation. This Section may also include topics related to beverages with special functionalities targeted at populations with dysphagia, or nutritional support needs. Non-alcoholic beverages include but are not limited to infusions, carbonated drinks, and non-alcoholic alternatives such as mocktails.

The aim of this Section is to build knowledge around tea, coffee, water, and other non-alcoholic beverages focusing on subjective and objective evaluations. Subjective evaluations may include consumer acceptance, perception, emotions, and/or consumption, and objective evaluations may include descriptive sensory evaluation or instrumental analysis.

The scope of this Section includes:

  • Sensory descriptive analysis;
  • Consumer acceptance;
  • Consumer perception;
  • Consumer emotion during consumption;
  • Consumer perception of health benefits;
  • Testing with populations with special needs (e.g., dysphagia);
  • Non-alcoholic alternatives;
  • Chemical and physical characterization;
  • Beverage consumption behavior.
