Dear Colleagues,
In the food industry in its broadest sense, including packaging, it is important to detect microbial pathogens that are harmful to human health and life, but it is also important to understand how to eliminate them. In recent years, there has been an increasing trend in the use of biocidal substances, both bactericidal and fungicidal, of various origins. They can be natural substances or synthetic reagents or preservatives. Introducing them into packaging materials in various ways protects the goods from premature spoilage, and at the end of their usage life, they do not pose a major burden to the environment due to their planned and bioaugmentationally targeted biological degradation. This Special Issue is extremely important for the protection of food, the consumer, and the environment and the prevention of food waste.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
