Microbiome Innovations in Food Systems for a Green Future

Dear Colleagues,

Today, we face numerous challenges in shaping sustainable food systems, which significantly affect human health, environmental well-being, societal welfare, and economic stability. Microbiome research provides remarkable prospects to address critical global challenges, such as food security, climate change, and environmental degradation, by transforming food production, minimizing waste, and fostering ecological balance. These objectives constitute a core focus of the “Infrastructure of Microbiome Applications in Food Systems–FOODBIOMES”, a Greek research infrastructure committed to microbiome applications to adapt food systems and drive progress in human health and food sustainability.

As this Special Issue aims to highlight the microbiome innovations in agriculture, food production and processing, health, nutrition, and food safety, as well as in shaping sustainable policies and regulations, we welcome submissions covering topics that include, but are not limited to, the following:

• Enhancing soil fertility through microbial communities.
• Microbiome-based biocontrol methods for pest and disease management.
• Plant-associated microbiomes in improving crop resilience to climate change.
• Fermentation innovations and microbiome-driven food preservation.
• Microbial solutions for reducing post-harvest losses.
• Applications of microbiomes in alternative protein production.
• Reducing greenhouse gas emissions through microbial interventions.
• Innovations in waste management and circular food systems using microbiomes.
• Advancements in functional foods and feedstocks for enhanced human and animal nutrition.
• Microbiomes and their role in food safety and pathogen control.
• Understanding microbiome impacts on dietary sustainability.
• The role of microbiome science in shaping food policies and regulations.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Microorganisms is an international peer-reviewed open access monthly journal published by MDPI.
