Special Issue Information

Dear Colleagues,

Healthy diets have been extensively studied for their effects on human health. Today, the definition of a healthy diet is evolving to include not only human health but also the health of the planet. Defining healthy, sustainable diets will therefore play a crucial role in addressing human health while allowing environmental sustainability. Ensuring that global diets are both nutritious for individuals and ecologically sustainable is imperative in mitigating the detrimental effects of food production on the planet. However, while certain studies have examined the environmental footprint of specific foods or food groups, there is a lack of holistic assessments considering dietary patterns and their impact on ecosystems, biodiversity, and climate change. These research gaps hinder the development of evidence-based dietary guidelines that could drive a shift in dietary patterns to simultaneously prioritize human health and environmental sustainability. Filling this research gap means understanding the complex factors involved in human consumption and the impact of nutrients and diets on overall health and the environment.

In this Special Issue on sustainable diets, we welcome original research, as well as critical or systematic review papers that present new data or discuss existing data on topics related to sustainable nutrition and diets, including, but not limited to, the following:  

  • The environmental impact of food products and diets, including life cycle analyses;
  • Dietary intake studies that combine outcomes of health and sustainability, such as nutrient intake, diet sustainability indices, and dietary and environmental modelling;
  • Evaluation of dietary guidelines in terms of their environmental impact;
  • Environmental assessment of dietary trends, e.g., plant-based and vegan diets;
  • Development of assessment models and indices for sustainable global diets.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. A guide for authors and other relevant information for submission of manuscripts is available on the Instructions for Authors page. Sustainability is an international peer-reviewed open access semimonthly journal published by MDPI.

Please visit the Instructions for Authors page before submitting a manuscript. The Article Processing Charge (APC) for publication in this open access journal is 2400 CHF (Swiss Francs). Submitted papers should be well formatted and use good English. Authors may use MDPI's English editing service prior to publication or during author revisions.
