Special Issue Information

Dear Colleagues,

We are writing to invite you to contribute to a Special Issue of Foods focusing on the transformative potential of polyphenols in preventing and managing chronic diseases. This issue aims to gather leading researchers across disciplines to explore the cutting-edge advancements in understanding how polyphenols from fruits, vegetables and agri-foods positively impact human health.

We welcome submissions related to the following:

  • Bioactive bounty in fruits, vegetables and agri-foods: Identifying, characterizing and quantifying polyphenols and other health-promoting compounds.
  • Polyphenols for chronic disease prevention: Exploring their role in mitigating cardiovascular disease, cancer, diabetes and neurodegenerative diseases.
  • Upcycling food waste: Utilizing food waste as a source of functional food ingredients and food additives.
  • Unveiling the mechanisms of action: Investigating the molecular and cellular pathways by which polyphenols exert their beneficial effects.
  • Navigating the health claim landscape: Addressing the challenges and opportunities in establishing evidence-based health claims for polyphenol-rich foods and functional ingredients.

We particularly seek original research, comprehensive reviews, novel food processing techniques to improve bioactive function and insightful perspectives that advance our knowledge about the potential of polyphenols to improve human health. We are looking for work that translates fundamental knowledge in food science into practical solutions for improving health.

All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
